Cuban Sandwich

I LOVE toasted/grilled sandwiches from McAlisters, Subway, Quizno's, etc... so I thought I should learn how to make one at home. Well... I did it! I made a "Cuban Sandwich" tonight that is SO easy & delicious!

Cuban Sandwich

Ingredients: (I will include measurements, although it's all pretty much by eye)
1 Cup Mayonnaise
5 Tbs Italian Dressing
4 hoagie rolls
4 Tbs mustard
1/2 pound(ish) deli turkey meat
1/2 pound(ish) deli ham meat
1/2 pound(ish) sliced Swiss cheese
1 cup(ish) Shredded Monterery Jack cheese
1 cup pickle slices
1/2 cup olive oil

Directions:
In small bowl, mix together Italian dressing & mayo
Slice Hoagie rolls in half (lengthwise & width)
Spread mayo mixture on each hoagie roll
Spread mustard on each hoagie roll
Arrange layers of ham, turkey, and Swiss cheese on each roll.
Top with hand full of shredded swiss on each roll.
Arrange pickle slices on each roll
Close sandwich and brush olive oil on outsides of roll.
Heat non stick skillet on medium-high heat.
Place sandwiches in skillet (2 at a time) and cook for 2 minutes pressing down on sandwiches with the bottom of a plate covered in aluminum foil (to press sandwich). Flip sandwiches and cook 2 minutes on other side.
Cut sandwiches in half and enjoy! : )
(If the "guts" - meat & cheese - aren't warm enough, you can nook them in the microwave for 15-30 seconds)

Country Potato Soup

4 cups diced raw potatoes 1/2 cup chopped Onion
1/2 cup chopped celery 1 1/2 cups Water
2 Chicken Boullion cubes 2 tsp. Salt
2 cups Milk 2 Tbs. Flour
8 oz. sour cream 1 lb. Velveeta cheese (cut in big chunks)
1 pkg. Broccoli (optional)

Combine potatoes, celery, onion, water, salt and chicken cubes in a large pot. Cover and cook until potatoes are tender, about 20 minutes. Don't overcook or potatoes will be mushy. Add 1 cup of the milk and let that heat through.

Mix sour cream, flour, and remaining cup of milk to make a smooth mixture. Add to potato base. Lastly, add broccoli and cheese and let that heat.

I use broccoli as that is a family favorite. You can completely omit this or add your family's favorite vegetable.

Baked Pork Chops

Made these last night and they were DELICIOUS! They take about 2 hours to make, but only 30 minutes of that is prep time.

6 pork chops
1 tsp garlic powder
1 tsp seasoning salt
2 egg, beaten
1/4 cup all purpose flour
2 cups Italian style bread crumbs
4 Tbs Olive Oil
1 can Cream of Mushroom condensed soup
1/2 cup milk
1/3 cup white wine

Preheat oven to 350 degrees.
Rinse pork chops and pat dry with paper towel. Season with garlic powder & seasoning salt to taste (I did full tsp of each). Place the beaten eggs in a small bowl. Dredge the pork chops in the flour, dip in the egg, and coat well in the bread crumbs.
Heat the oil in a skillet over medium-high heat. Fry the pork chops about 5 minutes on each side (or until breading is brown). Transfer pork chops to 9x13 baking dish and cover with foil.
Bake for 1 hour.
Combine Cream of mushroom, milk, and white wine. After pork chops have baked for an hour, pour soup mixture over all, cover with foil, and bake for 30 more minutes.
Mashed Potatoes & Gravy are pretty much a MUST have side with these! : )
